Weekend Ahead...

Here we are upon another wonderful summer weekend. I am just popping in for a moment this morning to wish you all a great end to your week. I will be making art, (that always makes my weekends special!)

looking for wonderful art supplies as I go shopping to GW, AC Moore, Michaels, and the thrift stores.

Here's wishing you all lots of pink millinery flower encrusted hats (my fav weekend thrift store find!)

and lots of time to have a little tea and yummy snacks and basically enjoy yourself. Talk to you all next week.

An Oldie but a Goodie....

Hi all. I am just on my lemon kick another week and thought I would re-post a recipe from Paula Dean for a lovely lemon meringue pie.I love having time in my kitchen making all kinds of pies and cookies.

I thought I would re-post also a few pics of my kitchen in my new home for those of you who haven't see it yet. I really spend a lot of time at that island. What did I do without an island all those years before? I can really spread my things out now and bake and cook away!

I have had a lot of comments about this lemony pie.Paula, you came up with another great recipe!

With all the heat of July, it really is a quick and easy dessert. If you haven't tried it, it really is a delicious summertime treat.

Chocolate, Grahams, and Toasty Marshmallows...

Summer just would not be summer without that simple, yummy, and chocolately treat of s'mores. My new home has an entire area where there is a fire pit where we sit on benches and toast these treats up on warm summer nights.

With that in mind, my little tablescape (really a little place setting) is all decked out and ready for one of my gooey treats.

I have added three little wooden trees made by a local artisan. These trees are just so collectible and so amazing as they are carved out of a single piece of wood. Each tree softly bends as if blowing in a PA night in the woods. My table setting dishes come from TJ. I got a whole set and display them in my Adirondack hutch in my kitchen, but for s'mores they just had to come out and be used!

Well, I'm off to start the fire and toast up a bunch of my marshmallows. Enjoy Tablescape Thursday

Flowers are Little Works of Art...

I am just having a little fun today with my mosaic maker and all the fun flower pictures I have accumulated. Flowers are just like little pieces of art to me. Sometimes I can't believe that they are real! Take a moment and "smell the flowers" today. There are truly an amazing creation that is all around us this time of year!

PS...Please enjoy a little of Beethoven's 7th... one of my favorite pieces of music of all time. Did you know that Beethoven was severely deaf at the time he wrote this piece, and by the time he wrote the 9th symphony he was completely deaf. This is such an inspirational and amazing piece. It also reminds us that anything is possible. Enjoy!

Country Fair Apple Pie...

What a gorgeous day here in PA. The sun is shining and the breeze is blowing. I have been having a great time doing laundry, hanging my sheets out on the line, cleaning, cooking, and baking. I just pulled this yummy pie out of the oven a few minutes ago. There is nothing like a fresh pie with ice cream to brighten any day.

Apple pie that has a crumble top is my favorite kind of pie. I just love the delicious brown sugar topping, and it goes so well with a little ice cream!

I laid the pie on a table in front an large open screened set of doors to cool. Once cooled though, I am going to put it in one of my pie keepers. Do you have any pie keepers to store your homemade pies? They are really just decorative bottoms and tops. The bottom is used to bake your pie, and when it has cooled you put the top part on to store it. This one has little houses and the saying, "Home Sweet Home."

I just picked up a cherry lattice pie keeper this weekend from TJ Maxx. This is my favorite one right now. I even leave it out on my stove for decoration. Somehow it just makes the stainless steel stove a little more homey. I just love that old fashioned look. Enjoy your day and enjoy a little pie! Hugs, Amy

Country Fair Apple Pie

9-inch pastry shell, unbaked, chilled (or you can make one from scratch, which I did)
1 cup sifted flour
1/2 cup brown sugar, firmly packed
1/8 teaspoon salt
1/2 soft butter
6 cups peeled, sliced cooking apples
1/2 granulated sugar
1 teaspoon ground cinnamon

Combine flour, brown sugar, salt and butter. Blend until crumbly then set aside. Combine apples, granulated sugar, and cinnamon. Mix gently to coat apple slices. Pack apple mixture into chilled crust. Sprinkle crumb topping over apples.

Bake in a 375 degree oven until apples are tender, about 50 minutes.

Serve this apple pie with vanilla ice cream.

Summertime Lemonade Cookies...

Sometimes you just need a cookie...I think I have had several times this week when I have needed a cookie (LOL!)With my love of lemon-flavored food right now between the raspberry lemonade to lemon sorbet to lemon pie, I thought I would share a really delicious summertime cookie recipe that melts in your mouth! So refreshing on a hot July day.

Here is the very simple and quick recipe:

Cookie

2-1/2 cups all-purpose flour
1-1/2 cups sugar
1 cup butter, unsalted, softened
2 eggs
1 tablespoon freshly grated lemon peel
1 tablespoon lemon juice
1-1/2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt

Heat oven to 400 degrees. Combine all cookie ingredients in a large bowl. Beat at low speed until well mixed.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheet. Bake for 6 to 8 minutes or until edges are lightly browned.

Glaze

2-1/2 cups powdered sugar
1/4 cup lemon juice

Combine all glaze ingredients and stir until smooth. Frost warm cookies with glaze. Sprinkle with additional lemon peel, if desired.

Makes 5 dozen cookies.
